This ‘Kale and Tuna bake’ recipe by Zoe Chircop, founder of ‘My Better Me- My Kitchen By Zoe‘ is super easy and really nutritious too.
Kale is a nutritional powerhouse packed with antioxidants such as vitamin C, beta-carotene, kaempferol and quercetin
Ingredients:
- 3 x leaves of kale
- 1 x can of tuna
- 5 x cherry tomatoes
- 8 x broad beans (ful)
- 1 x teaspoon oregano
- 1 x tablespoon kunserva
- 1 x egg
- 30ml milk
- 1 x tablespoon grated cheddar
Method
- Line dish with the kale;
- Chop the tomatoes & broad beans;
- Drain tuna of any oil;
- Mix the tomatoes, beans, tuna & oregano in a bowl;
- Mix the egg with the milk in a separate bowl;
- Place the tuna mixture onto the kale;

- Pour the egg mixture on top;
- Sprinkle with the cheddar cheese;

- Bake on 200 Degrees Celsius for 15-20 mins;
And voila, your ‘Kale and Tuna Bake’ is done.
